Ingredients
  

  • For the Meatballs
  • 500 g ground beef or 250g beef + 250g lamb for richer flavor
  • 1 small onion finely grated
  • 3 garlic cloves minced
  • 1 large egg
  • 1/3 cup almond flour
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh mint chopped
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil for pan-frying or brushing if baking
  • For the Keto Tzatziki
  • 1 cup Greek yogurt full-fat
  • 1/2 cucumber grated and squeezed dry
  • 1 garlic clove minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill or parsley
  • Salt and pepper to taste

Method
 

  1. Prepare the Meatball Mixture
  2. In a large bowl, combine the ground meat, grated onion, minced garlic, egg, almond flour, and all herbs and spices. Mix gently using your hands—overmixing can make the meatballs tough. The mixture should feel slightly sticky but hold together well.
  3. Shape Your Meatballs
  4. Roll the mixture into small meatballs, about the size of a tablespoon. If the mixture sticks to your hands, lightly wet your palms with water or olive oil.
  5. Choose Your Cooking Method
  6. You can either pan-fry, bake, or air fry the meatballs:
  7. Pan-fry: Heat olive oil over medium heat and cook meatballs for 8–10 minutes, turning until browned and fully cooked.
  8. Bake: Place on a parchment-lined tray, brush with olive oil, and bake at 200°C (400°F) for 18–20 minutes.
  9. Air fry: Cook at 190°C (375°F) for 12–14 minutes.
  10. Make the Tzatziki
  11. In a bowl, mix the Greek yogurt with grated cucumber, garlic, lemon juice, herbs, and olive oil. Season to taste and refrigerate until ready to serve.

  13. Plate your meatballs with a generous spoon of tzatziki, fresh tomatoes, olives, and a low-carb side like cauliflower rice or a crisp Greek salad.
