Prepare the beef
Start by patting your beef cubes dry with paper towels. This step may seem minor, but it makes a huge difference in achieving that golden-brown crust. If the beef is wet, it will steam instead of sear. Once dry, season generously with paprika, salt, and black pepper.
Sear the steak
Heat a large skillet (cast iron is ideal) over high heat and add the olive oil. When the oil is shimmering, place the beef cubes in a single layer, leaving a little space between each piece. Crowding the pan will lower the heat and prevent browning. Let the beef cook undisturbed for 2 minutes before flipping. This gives it a caramelized sear. Cook for another 2 minutes on the other side, then remove the beef and set aside.
Make the garlic butter sauce
Reduce the heat to medium and add the butter to the same skillet. Once melted, toss in the minced garlic and stir for about 30 seconds until fragrant. Be careful not to burn the garlic, as it can turn bitter.
Coat and finish
Return the seared steak bites to the pan and toss them in the garlic butter sauce until evenly coated. Cook for 1 more minute to allow the flavors to come together. Sprinkle with fresh parsley for a pop of color and freshness.
Serve and enjoy
Serve immediately while hot. These steak bites are delicious on their own as an appetizer, but they also shine as a main dish when paired with mashed potatoes, roasted vegetables, rice, or even pasta.
