Ingredients

  • 250 g 8 oz fettuccine or spaghetti – any long pasta works beautifully.
  • 3 tbsp butter – gives the sauce a rich base.
  • 5 cloves garlic minced – the hero of the recipe.
  • 1 cup heavy cream – for that luscious velvety texture.
  • ½ cup grated Parmesan cheese – adds saltiness and depth.
  • 1 tsp Italian seasoning – for subtle herby notes.
  • Salt and black pepper to taste
  • Fresh parsley optional – for garnish and a pop of color.
  • Optional add-ins: sautéed mushrooms, spinach, grilled chicken, or shrimp for protein.

Method

  1. Step 1: Cook the pasta
  2. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente. Reserve about ½ cup of the pasta water, then drain the rest.
  3. Step 2: Make the garlic base
  4. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant and lightly golden. Be careful not to burn it — burnt garlic can turn bitter.
  5. Step 3: Create the creamy sauce
  6. Pour in the heavy cream and stir gently. Lower the heat and let it simmer for about 2–3 minutes until the sauce slightly thickens. Add Italian seasoning, salt, and pepper.
  7. Step 4: Add the cheese
  8. Stir in the grated Parmesan cheese until fully melted and smooth. The sauce will become thicker and creamier. If it’s too thick, add a splash of the reserved pasta water to loosen it up.
  9. Step 5: Combine pasta and sauce
  10. Add the cooked pasta to the skillet and toss it well until every strand is coated in the creamy garlic sauce. Adjust seasoning if needed.
  11. Step 6: Garnish and serve
  12. Sprinkle freshly chopped parsley on top and serve hot. You can also top it with extra Parmesan or chili flakes for a flavor boost.
