Preheat & prepare
Preheat your oven to 200°C (≈ 400°F). Line a baking dish with parchment paper or lightly grease it.
Marinate the chicken
In a bowl, combine olive oil, minced garlic, lemon juice, lemon zest, oregano, paprika, salt, and pepper. Mix well.
Place chicken breasts in the bowl or a zip-top bag. Coat well with the marinade. Let sit for 10–15 minutes (or longer if you have time) to soak up flavor.
Bake
Transfer chicken breasts to the baking dish. Pour any leftover marinade over the top.
Bake in the preheated oven for about 20–25 minutes, or until the chicken is cooked through (internal temperature ~75°C / 165°F). If the top starts to brown too much, cover loosely with foil.
Rest & serve
Remove from oven and let rest for 5 minutes to retain juices.
Garnish with chopped fresh parsley.
