When it comes to warm and comforting weeknight meals, nothing beats the aroma of a classic homemade meatloaf baking in the oven. But this isn’t your ordinary meatloaf — this recipe uses Stove Top stuffing mix, which brings incredible flavor, perfect texture, and built-in seasoning.

Ingredients
  

  • For the Meatloaf:
  • 1 ½ pounds ground beef preferably 80/20 for tenderness
  • 1 box Stove Top stuffing mix any flavor—savory herbs is best
  • 2 large eggs
  • 1 cup water or beef broth
  • ½ cup chopped onions optional but recommended
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • For the Glaze:
  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard or BBQ sauce optional for extra depth

Method
 

  1. Preheat and Prep
  2. Begin by preheating your oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it to prevent sticking.
  3. Mix the Base
  4. In a large mixing bowl, combine the Stove Top stuffing mix with 1 cup of water or broth. Let it sit for about 2–3 minutes so the stuffing softens slightly — this helps create a perfect meatloaf texture.
  5. Add the Rest of the Ingredients
  6. Add the ground beef, eggs, onions, Worcestershire sauce, pepper, and garlic powder. Mix gently with your hands or a spatula. Don’t overmix — that can make the meatloaf dense.
  7. Shape and Bake
  8. Transfer the mixture into the loaf pan, pressing it evenly.
  9. Bake for 45 minutes.
  10. Add the Glaze
  11. In a small bowl, mix ketchup, brown sugar, and mustard or BBQ sauce.
  12. Remove the meatloaf from the oven, spread the glaze on top, and return it to bake for another 15–20 minutes, or until the internal temperature reaches 160°F (71°C).
  13. Rest and Serve
