Step 1: Prepare the Beef
Slice the beef thinly against the grain for maximum tenderness. Pat dry with paper towels. This helps the meat sear properly without steaming.
Step 2: Mix the Sauce
In a small bowl, whisk together beef broth, soy sauce, oyster sauce, hoisin sauce, sesame oil, and sugar. Set aside. Keep the cornstarch slurry ready for later.
Step 3: Cook the Broccoli
Bring a pot of water to boil and quickly blanch the broccoli florets for 1–2 minutes until bright green and slightly tender. Drain and set aside. This step helps keep broccoli crisp but tender in the stir-fry.
Step 4: Stir-Fry the Beef
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the sliced beef in a single layer, cooking for 2–3 minutes until browned but not fully cooked. Remove and set aside.
Step 5: Aromatics
In the same pan, add the remaining oil, garlic, and ginger. Stir-fry for about 30 seconds until fragrant.
Step 6: Combine Everything
Return the beef to the pan. Add broccoli and the prepared sauce. Stir well and bring to a simmer. Slowly pour in the cornstarch slurry and cook until the sauce thickens and coats the beef and broccoli.
Step 7: Serve Hot
Serve immediately over a bed of steamed rice or noodles. Garnish with sesame seeds or sliced green onions if desired.
