Ingredients
  

  • 2 medium chicken breasts about 400 g
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder adjust to taste
  • 1 garlic clove minced
  • Salt & pepper to taste
  • 1 cup cooked rice white or brown
  • 1 cup canned black beans drained and rinsed
  • 1 cup sweet corn canned or cooked
  • 1 red bell pepper diced
  • 1 small onion diced
  • 1 cup shredded cheese cheddar or Mexican blend
  • 4 large flour tortillas 10-inch
  • Fresh cilantro chopped (optional)
  • Salsa sour cream, or guacamole for serving

Equipment

  • Large skillet or frying pan – to cook the chicken and veggies
  • Mixing spoon or spatula – for stirring and sautéing
  • Cutting board & knife – for prepping chicken and vegetables
  • Measuring spoons & cups – to measure spices, rice, and beans
  • Small saucepan (optional) – if cooking rice separately
  • Tongs – to handle tortillas and chicken pieces
  • Large plate or tray – to assemble burritos
  • Foil or parchment paper – for wrapping burritos if storing or meal prepping

Method
 

  1. Prepare the Chicken
  2. Cut chicken into small strips.
  3. In a pan, heat olive oil over medium heat.
  4. Add chicken, paprika, cumin, chili powder, garlic, salt, and pepper.
  5. Cook 7–10 minutes until golden and cooked through.
  6. Cook the Veggies
  7. In the same pan, sauté onion and bell pepper until soft (about 5 minutes).
  8. Add corn and black beans, mix, and heat through.
  9. Assemble the Burritos
  10. Warm tortillas slightly in a dry skillet or microwave.
  11. Place rice in the center of each tortilla.
  12. Add chicken, veggie mix, and cheese.
  13. Sprinkle with cilantro if using.
  14. Fold & Wrap
  15. Fold sides inward, then roll tightly from the bottom up.
  16. Toast burritos in a dry skillet (2 minutes per side) for a crispy finish.
  17. Serve
  18. Slice in half and enjoy with salsa, sour cream, or guacamole.
