Prepare the Chicken
Cut chicken into small strips.
In a pan, heat olive oil over medium heat.
Add chicken, paprika, cumin, chili powder, garlic, salt, and pepper.
Cook 7–10 minutes until golden and cooked through.
Cook the Veggies
In the same pan, sauté onion and bell pepper until soft (about 5 minutes).
Add corn and black beans, mix, and heat through.
Assemble the Burritos
Warm tortillas slightly in a dry skillet or microwave.
Place rice in the center of each tortilla.
Add chicken, veggie mix, and cheese.
Sprinkle with cilantro if using.
Fold & Wrap
Fold sides inward, then roll tightly from the bottom up.
Toast burritos in a dry skillet (2 minutes per side) for a crispy finish.
Serve
Slice in half and enjoy with salsa, sour cream, or guacamole.
